I really enjoyed this, fresh and light with a little heat, but
not too much. I would class this as an appetiser though, great finger food to
share with friends, you could serve it as a main though, with baked potato
instead of pita bread or a green salad maybe, or both? However you decide to
eat this I hope you enjoy it as much as we did!
Greek Chicken
500 grams cooked diced chicken
pita breads1 scallion/spring onion to garnish
MARINADE
150 grams plain yogurt
150 grams light sour cream8 scallions or spring onions, thinly sliced
2 tbsp fresh cilantro/coriander
1 tbsp parsley chopped
1½ tsp ground coriander
1½ tsp cumin
Salt and freshly ground black pepper to taste
1. In a large bowl, stir together the yogurt, light sour cream,
scallions/spring onions, cilantro/coriander (fresh), parsley, ground coriander,
cumin and salt and black pepper to taste.
2. Toss the chicken pieces in the marinade.
3. Toast the pita breads. Garnish the chicken with scallions and
serve with pita breads.
